Ingredients
- 6 swordfish steaks, about 8 oz each
- 2/3 cup extra virgin olive oil
- 1/2 cup all purpose flour
- 2 cloves garlic, finely chopped
- 1/4 cup finely chopped parsley
- 1 tbsp finely chopped fresh oregano
- 1 tbsp finely chopped fresh thyme
- 1 dried chile pepper, crumbled
- salt and freshly ground black pepper to taste
Method
- Rinse the swordfish and dry them carefully with paper towels. Heat 1/4 cup oil in a large skillet over high heat. Flour the swordfish steaks and, when the oil is hot, fry them for 15 minutes, or until golden brown on both sides. Remove from the skillet and drain on paper towels. Mix the remaining oil with the garlic, parsley, oregano, thyme, and chili pepper in a small pan. Season with salt and pepper and cook over medium heat for 15 minutes. Pour the sauce over the swordfish steaks and serve hot.
